Yukon potatoes past their “use by” date (seen below left), can be planted and the next “crop” can be harvested in 3-4 months! An emerging sprout can be seen on the potato in the top left corner of Figure 1.

March 23, 2021 placed “past due” Yukon potato in potting soil, with only 1/4” showing. Harvested July 2, 2021.

Figure 2: In short, take your past due Yukon (left), bury it in well drained potting soil with 1/4” showing (see below). Keep the soil moist by pouring a half cup of water on the circle shown below. A green sprout will break the surface and grow into the mature plant (see Figure 3).

After a few more weeks, leaves will begin to droop, wilt, and drop to the surface of the soil. Clip and remove limp branches lying on the surface. When all of the leaves are gone, the potatoes can no longer grow.
